What is Xanthan Gum?
It is mainly made from starch, a high molecular polysaccharide produced by a biotechnological fermentation process. It readily dissolves in hot or cold water; also, it is stable in acidic and alkaline solutions. Xanthan Gum constitutes a pleasant texture in foods and beverages. It is primarily used as a thickening agent. A small amount of Xanthan Gum to liquids can vastly increase the viscosity, making it useful for a variety of products that require thickening. This hydrocolloid is used mainly in sauces, ice creams, salad dressings, and other frozen foods. It also can be used as an alternative to gluten-free products and egg replacement for texture.
