What is the use of starter culture in the dairy industry?
Dairy starter cultures are microorganisms that are added to milk to produce the desired outcome in the final product, often through their growth and fermentation processes. The most common use of starter is for the production of lactic acid from lactose, which in most cases or assists in the coagulation of milk protein by lowering its pH value.
