What is the use of hydrocolloids?
Hydrocolloids act as thickening and gelling agents in food products. As thickening agents, they are used in soups, gravies, salad dressings, sauces, and toppings. In contrast, as gelling agents, they are widely used in products like jam, jelly, marmalade, restructured foods, and low sugar/calorie gels.
